
Homemade Tomato Basil Soup

Ingredients
8 Tomatoes
3 Springs of Thyme
1⁄4 Teaspoon of Salt
1⁄4 Teaspoon of Oregano
1⁄4 Cup of Olive Oil
2 Cracks of Lemon Pepper Grinder from Trader Joes'
1 Bushel of Basil Leaves
1 Cup of Chicken Broth
1⁄4 Cup of Balsamic Vinegar

Directions:
Step 1:Roasting Tomato Prep
First we need to prep our tomatoes for roasting. Simply cut each tomato in half.


Step 2:Tomato Seasoning
Give a baking sheet a generous coating of olive oil. Place the tomatoes cut side down to soak up that oil- then give them a flip and add flake salt, oregano, and thyme sprigs. Get these in the over at 400 degrees for 30 minutes.




Step 3:Onion Prep
Slice your yellow onion and half and remove the outer skin. Give the onion a rough chop. In a large frying pan add olive oil and with high heat, sautee the onions stirring often. Season with lemon pepper or regular pepper.





Step 4:Making the Soup
30 minutes later, take your tomatoes and add them to a sauce pan along with the sautéed onions. Add basil, and a cup of chicken broth along with 1/4 cup balsamic vinegar




Step 5:Blend it all together
With a hand blender that can be found <a href="https://amzn.to/3tN1Vwl" target="new">here</a>, blend all the ingredients together. This helps cut down all the remaining solid ingredients while emulsifying the vinegar, oil, and fats used in this recipe.


Step 6:Soup for you!
Take your soup off the burner and add it to a bowl. You can garnish it with some parmesan cheese, parsley, or chives. Freeze the rest for later.
