Bariatric Taco Night: Provolone Cheese Mini Chicken Tacos

Say it with me Provolone Chicken Mini Tacos- has there every been a better title slash description for food?

Ingredients

1 Rotisserie Chicken

 

1 Can of Corn

 

1 Red onion

 

1 Lime

 

1 Packet Chicken fajita mix

 

1 Handful Cilantro

Directions:

Step 1:Taco Shells

First, let’s make our shells. Take some provolone cheese and cut into circles. I literally use a mason jar to cut these down. Bake these in the oven at 380 degrees for 8 minutes.

Step 2:Taco Filling

Next, let’s make some tacos! Start off with some red onion. Add a little corn, black beans, taco seasoning and rotisserie chicken. Mix that all together and hit that with some lime juice and cilantro. Seriously, if you love a fresh taste, you’re going to love these!

Step 3:Put it all together

Fold your cheese shells in half and lay down some taco filling. I tend to make a bunch because these are so addicting. Full of protein and flavor, these are for all to enjoy. Pack up the rest up in mason jars and you have lunch for every day of the week.
