Ingredients

1 Tablespoon Extra Virgin Olive Oil

 

1⁄4 Red Onion, diced

 

1 Clove of Garlic

 

1 Can of Pinto Beans (15oz)

 

1 (15-ounce) can pinto beans, drained and rinsed

 

1/3 Cup Freeze Dried Cilantro

 

1⁄2 Cup chicken broth

Directions:

Step 1:

In a small skillet over medium heat, heat the oil.

Step 2:

Add the onion, garlic, and sauté until the onion is soft, about 3 minutes.

Step 3:

Add the beans and cheese, and bring to a simmer.

Step 4: 

Mash the beans with a potato masher.

Step 5:

Continue to simmer until well mashed, leaving some chunks if desired, and serve. Add a little freeze-dried cilantro

Step 6: 

Serve this with a tortilla pan toasted and a side of sour cream and enjoy!
