Bariatric Chips: Parmesan Zucchini Chips

Got a craving for some chips? Well aren’t you lucky, that’s sort of what we do here! Here’s a chip you can can have and not feel guilty over. It;s super easy to make and if you’re a veggie lover- well- you’re going to love these.

Ingredients

1 Zucchini

 

1 Tablespoon Salt

 

1 Teaspoon Pepper

 

1 Teaspoon Smoked Paprika

 

6oz Parmesan Cheese

 

1⁄4 Cup of Olive Oil

Directions:

Step 1:Prep

Preheat your oven at 400 degrees. The key to making these crispy is by pulling the extra water out of the zucchini. Slice up your zucchini and place the slices on a paper towel. While those are drying, let’s prep our ingredients.

Step 2:

In a large bowl, mix together the parmesan cheese, a tablespoon of salt, a teaspoon of pepper, and a pinch of smoked paprika.

Step 3:

Place your dried zucchini into a bowl and drizzle olive oil all over the slices. Take your Parmesan mixture and dump it on top. Make sure every chip gets plenty of seasoning!

Step 4:

Place each chip on a baking sheet covered with parchment paper. Put these in the oven at 400 degrees for 20-25 minutes. You can serve these as is over top with some sour cream and onion dip. You can find the recipe for that here!
